Time flies. Tomato season is almost over. So let’s make something very delicious, maybe even a little unusual with tomatoes. How about a savory heirloom tomato galette. Filled with dill cashew-cream, juicy heirloom tomatoes, sweet cherry tomatoes and topped with fresh dill, coriander and basil. Sounds good, right. So let’s get started right away! Because I want to keep this recipe post short today. I rather want you to go and bake this galette instead of reading my stories. Like the one which follows me as a child. A child that rather ate ketchup than homemade tomato sauce much to the disappointment to my mum’s friend who made it just for me.
Or my recent trip to New York City where I went to the farmer’s market at Union Square and got heirloom tomato envy. Because we don’t have such a humongous offer in Istanbul. But good for you, New York people 😛 Though I found 4 lonely heirloom tomatoes in our local supermarket beginning of this week. That day I felt like I won in the lottery. Well, in the vegetable lottery but that’s still very exciting. So yes, without further ado, let’s roll, bake and eat.
P.S. Time does go by quicker as we get older, right? I mean, 5 years ago I definitely would not have almost missed tomato season….Just saying.
Heirloom Tomato Galette with Dill Cashew-Cream (Vegan + Gluten-free)
HEIRLOOM TOMATO GALETTE WITH DILL CASHEW-CREAM (VEGAN + GLUTEN-FREE)

For two people if served alone or for up to 4 people if served with salad
Ingredients
- Galette
- 1 1/4 cup brown rice flour
- 3/4 cup chickpea flour
- 8 tbsp soft coconut oil
- 3 tbsp ice cold water
- salt to season[br][br]
- Cashew-Cream
- 1 cup soaked cashews
- 1/2 cup water
- 1/2 lemon, juiced
- 7g / 7 tsp of finely chopped dill
- 1/4-1/2 tsp salt[br][br]
- Topping
- 1 big heirloom tomato, sliced
- 3-4 cherry tomatoes, halved
- 4-5 basil leaves
- a few branches of dill and coriander to garnish
Instructions
- Cashew-Cream!
- – In a high-speed blender combine all ingredients and blend until creamy and smooth[br][br]
Galette
- Add both flours and salt to a blender and pulse to mix it up
- Now add soft coconut oil and pulse until the flour and oil are completely mixed
- One spoon at a time, add the ice cold water and keep pulsing
- Remove dough from blender, it should be soft and slightly moist but not too runny (if that’s the case add a few tablespoon of flour)
- Form a ball, warp it in plastic and put it in the fridge for 5-10 min (not much longer otherwise it becomes to hard and difficult to roll)
- Preheat over to 400 °F/ 200 °C
- After cooling, roll out the dough between two sheets of parchment paper and carefully transfer the parchment paper with the rolled-out crust to a baking sheet
- Spread the dill cashew-cream in the middle, keep a 1.5-2 inch / 4-5 cm boarder of plain (empty) crust
- Top with sliced heirloom tomatoes, 2 halved cherry tomatoes and basil
- Bake galette for 30- 40 min or until golden brown
- Let cool slightly on baking sheet and garnish with remaining cherry tomatoes, dill and coriander
- Serve warm with green side salad
