Do you know that moment when you suddenly realize, the end has come? You knew it all the time but you repressed that thought. And from one second to the other your life may change completely because you know peach and strawberry season is going to end soon. Yes?! Sounds familiar? Well, I had that moment a few days ago and decided to pay a little tribute to my favorite summer fruit combination. So I created a little collection of three recipes with peach and strawberry as the main ingredients.
But this isn’t a selfless act to bring you creative healthy food. After our Lisbon trip and the overload of sweet treats I ate during those few days, I felt a little sluggish. Maybe it’s also what people call the post-vacation blues. Though I have to admit I’m quite happy being back home with my cats and to an abundance of fresh summer fruits and veggies. Either way, I don’t regret anything (because who has ever regretted a bite of freshly baked pastel de nata) but it was time to go back to my usual diet.
If you follow me on Instagram, you probably know that I had quite a lot of peach smoothies for breakfast during summer, almost always topped with strawberries. I’m usually not the kind who likes to eat the same thing over and over again but peach smoothies have been my best food buddy over the past months. One reason might be that peaches in Turkey just taste so much better than anywhere else. Though I haven’t lived and thus bought any in Europe for a few years and I can imagine the quality of foreign fruits are much better now than back then. So give peaches a try if you haven’t had any in a while and maybe you grow to like them as much as I do. I love to munch them like apples, roast a few slices for salads or add frozen peach cubes to a smoothie.
As for the strawberries, this is one of my all time favorites. I loved it as a child and whenever I get my hands on a box of sweet and juicy strawberries nowadays, I can’t resist. They are also Felix favorite fruits (and mango but there are no mangos in Turkey) so we always have a box in our fridge during its season. Similar to peaches, strawberries taste super delicious when you roast them. But usually I like to add slices to my smoothie bowls and my granola or have them as little TV snacks in the evening.
But no matter if you prefer savory or sweet food or a quick smoothie, my peach and strawberry recipes three ways has you covered. They are all simple, vegan, gluten-free and yes, even healthy. But most importantly each of the three recipes is delicious and all of them are a stable in my kitchen repertoire – at least as long as peach and strawberry last.
PEACH AND STRAWBERRY 3 WAYS

Peach and Strawberries are my favorite summer fruits. Combined they taste the best. So I created 3 different recipes with peach and strawberry. The recipe for the salad and the smoothie bowl yields 1, you can share the galette if you like.
Ingredients
- [b]Vegan Peach and Strawberry Galette[/b][br]
- [u]Crust[/u]
- 1.5 cups/190 grams gluten-free flour
- 0.5 cup/100 grams cold coconut oil
- 0.5 tsp vanilla extract
- 3 tbsp ice cold water
- pinch of salt[br][br]
- [u]Filling[/u]
- 1 peach
- 0.5 cup/100 grams strawberries
- 3-4 tbsp rice syrup (or maple syrup)[br][br]
- [b]Spinach Salad with Strawberries and Roasted Peaches[/b][br]
- [u]Salad[/u]
- 1 cup/225 grams spinach
- 1/2 peach
- 1/2 avocado
- 3-4 strawberries
- 1 tbsp sunflower seed[br][br]
- [u]Dressing[/u]
- 2 tsp coconut oil
- 2 tsp lemon juice
- pinch of salt[br][br]
- [b]Peach Oats Smoothie with Strawberries[/b][br]
- [u]Smoothie[/u]
- 1 frozen banana
- 1 medium size peach
- 5 Tbsp oast[br][br]
- [u]Toppings[/u]
- 3-4 sliced strawberries
- 1 tsp chia seeds
- 1 tsp shredded coconut
Instructions
Vegan Peach and Strawberry Galette
- Add flour, extract and salt to a blender and pulse until well mixed
- Now add coconut oil and pulse again until combined and crumbly
- Last but not least, gradually add the ice cold water to the blender, pulsing after the dough begins to clump together
- Take it out, form a ball, warp it in plastic and put it in the fridge for 10-15 min (but not much longer, otherwise it becomes too hard)
- Preheat oven to 200°C/ 325°F
- Place parchment paper on baking sheet and set aside
- Cut peaches in thin slices and strawberries in half
- After cooling, roll out the dough between two sheets of parchment paper
- Arrange the peaches on top, either pour the strawberries halves on top, too or place them on the outer side (so you end up with strawberries inside the crust which is super yum)
- Bring the sides of the dough over the peaches and strawberries and fold it gently (If the dough sticks to the parchment paper or is difficult to lift, just lift the parchment paper from underneath, form a crust and slowly peel of the paper, one side after another)
- Brush the sides with rice syrup or you can simply drizzle syrup over the sides to your taste
- Place in oven for 20-25 min or until crust is golden brown
- Enjoy with coconut whip, yoghurt or cream[br][br]
Spinach Salad with Strawberries and Roasted Peaches
- Wash spinach, cut of stems and place in a medium sized bowl
- Slice peach and either fry slices in a pan or place them on a baking sheet in the oven, turn on broiler for 5-10 min.
- Slice strawberries in half and add them to the spinach
- Peel and slice avocado in 12 pieces or bite-sized chunks and add those to the spinach as well
- Mix coconut oil, lemon juice and salt in a small jar
- After baking, let roasted peaches cool for 5 min
- Add peaches to spinach salad and combine everything gently, sprinkle with sunflower seeds and drizzle with coconut lemon dressing[br][br]
Peach Oats Smoothie with Strawberries
- Measure oats into blender and grind until powder
- Slice peaches and add 3/4 of the sliced peaches first and then the frozen banana
- Blend until creamy (you can also add a few tbsp of water or mylk if the mixture is not smooth enough but the juice of the peaches should do the job)
- Pour into a breakfast bowl, top with slices strawberries, remaining peaches and sprinkle with chia seeds and shredded coconut
