When was the last time you tried something for the first time? For me, it was just last weekend. I actually tried a few things for the first time. Had a housewarming party. Served only vegan food. And offered a raw lime cheesecake which had avocado as the main ingredient. Of course, I didn’t tell anyone because I was sceptical at first too. I mean I had tried avocado pudding before. I even shared my recipe for Matcha Avocado Pudding over on The Chalkboard Mag. But making a cake version at home…for other people, some of whom are clearly no vegans or experimental eaters…that was something else. To be honest, I did prepare two other cakes. One was a peach and apple crumble and the other one a strawberry coconut tart. I knew at least these two would be crowd pleasers.
I always do this thing when I’m too concerned about what other people think. Instead of going full out I choose an option that guarantees a few likes. Instead of serving the whole avocado cheesecake I opted for a few small cheesecake jars.
But to my surprise, the raw lime cheesecake was a real success. Our guests loved it and some of them even wanted to have the recipe. I’m not pretending I came up with the idea of a raw lime cheesecake. I guess making vegan puddings and cheesecake with avocado has been around for a while now. It’s for all those who had enough nut-based desserts or are looking for a more refreshing treat. Cold avocado combined with lime and sweetener is wonderful on a hot summer day. The texture is smooth yet firm and the lime gives it all a lemon sorbet like taste. The recipe is inspired by Hemsley & Hemsley’s Avocado Lime Cheesecake though I added a little bit less sweetener and opted for a simpler and chocolate free base.
Raw Lime Cheesecake

Ingredients
- Filling
- 350 g avocado (2.5 – 3 avocadoes)
- 160 ml lime juice (5-6 limes)
- 1 tsp lime zest
- 125 ml coconut oil
- 100 – 120 g rice syrup/maple syrup or honey
- 2 kiwis
- 3 tbsp shredded coconut
- Base
- 4 medjool dates
- 2 cups /100 g walnuts
- 2 tbsp shredded coconut
- pinch of salt
Instructions
Base
- Place all ingredients in a blender and pulse until you have a sticky but loose mixture
- Prepare 8-10 small glasses and spoon 1-2 tbsp of base mixture into each glass
Filling
- Add all ingredients to a blender and blend on medium speed until smooth
- Spoon 2-3 tbsp of filling on top of base mixture
- Put raw cheesecake in the fridge for at least 1 hour
- Before serving decorate each cheesecake with sliced kiwi and 1/2 tsp of shredded coconut
