Oh the joys of summer, they come in all forms. Sunshine, warmer temperatures, trips to the beach, ice cream and summer fruits. I’m not sure when my love for apricots and peaches started but it hasn’t been that passionate earlier in my life. As a German I grew up loving apples and strawberries. Noting wrong with that but it’s such a great feeling to extend your love to other fruits. So yes, my love for peaches and apricot is a recent one. I think it was that summer in France when I studied in Bordeaux for a semester. There was a traditional French bakery on my short walk between home and university. Every single day I’d pass by in the morning when the scent of freshly baked treats would fill up the streets of our neighborhood. I usually had the strength to resist the temptation of buying a croissant or two in the morning. I would always eat a big bowl of Muesli in the morning before leaving the house. A full and happy belly kind of saved me from walking in that insanely aromatic bakery. But when I got back home after a long day of lectures, deprived of all energy, this little place of baked heaven was more often than not a saviour. And as chance would have it, one of those apricot pastries was always left, waiting for me to come into the bakery and bringing it back home.
It must have been the taste of baked apricot in combination with the flaky and sweet pastry that made it my favorite treat during that time. And even today, I love the smell and flavour of roasted apricots and peaches. And although I didn’t want this blog post to be very long but rather quick and easy like the recipe, I had to tell you my personal story of how I fell for roasted apricots and peaches. I don’t eat much pastries these days. It’s a decision I made a few years ago – to be more healthy and to eat less sugar. And honestly, I don’t really crave the French flaky sweetness anymore. I do however still love baked peaches and apricots. Mixing them up with sweet banana, adding a pinch of salt and cinnamon and I’m transported back to memories of that summer in Bordeaux.
Roasted Peach Apricot Smoothie
ROASTED PEACH APRICOT SMOOTHIE

Ingredients
- 2 bananas
- 2 peaches
- 4 apricots
- 1/4-1/2 cup/ 60-120 ml almond milk
- pinch of salt
- drizzle of lemon juice
- pinch of cinnamon
- 2 tbsp chia seeds
Instructions
- Preheat the oven to 300°C/ 572°F and line a baking sheet with baking paper or foil
- Cut peaches and apricots in half, twist each fruit and pop out the stone
- Arrange peaches and apricots on baking sheet, place the sheet into the oven and bake for 20 min
- Remove from oven when golden around the edges and bubbling
- Let the fruits cool down for a few minutes * and put one peach half aside
- Add roasted fruits, banana, almond milk, salt, lemon juice and cinnamon to a blender and blend for 1-2 min
- Serve with chia seeds and decorate with sliced peach half
- *If you are as impatient as me, just add some ice cubes to the blender
